As much as you might think pumpkin spice is overdone, you have to admit – it really hits the spot after a run along a leaf-covered trail. These homemade rice cakes taste like a sweet treat while also serving as a recovery snack with 40g of carbs, approximately 30g of protein (depending on the powder you use), and 6g of filling fiber.
One thing to note about this recipe is that it calls for pumpkin seeds, but that can mean either shelled or shell-less. You can use either, but shell-less seeds (called pepitas) are dark green and can be eaten raw. If you use shelled pumpkin seeds, you’ll need to either buy pre-roasted and bake them yourself.
